This year, the evening of Monday, April 16th, 2018 will be orchestrated by mister David Mathieu, Chef of “Le Bois Joli” (cellar and restaurant) in Saint-Imoges.
With the desire to reveal the gastronomy of the Champagne, the Chef David Mathieu work with fresh products and wish to make us rediscover the real flavors.
Native of Épernay, David Mathieu has a route rich in beautiful work experiences:
– Sous-chef in the “Grand Cerf”,
– Head chef to the “Grand Monarque” in Chartres,
– Head chef in the *** Auberge “Le Gonfalon” in Meaux
and today chef of the “Bois Joli” !
For the Spring of champagnes 2018, he imagined 9 champagnes-dishes pairings, being inspired by the meeting with every wine grower, and especially by the expressiveness of each of 9 vintages which will be proposed to you in the tasting.
